Keto Biscuits and Sausage Gravy
Ingredients:
For the Biscuits:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cold, diced unsalted butter
- 3 large eggs
- 1/4 cup unsweetened almond milk
For the Sausage Gravy:
- 1 lb ground breakfast sausage
- 2 tablespoons unsalted butter
- 2 tablespoons almond flour
- 2 cups unsweetened almond milk
- Salt and pepper to taste
Instructions:
For the Biscuits:
- Adjust the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius) and place parchment paper on a baking pan.
- In a large bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.
- To the flour mixture, add cold, diced butter. Incorporate the butter with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- In a separate bowl, beat the eggs and then add them to the flour mixture. Stir until just combined.
- Add almond milk and mix until the dough comes together.
- Scoop out about 1/4 cup portions of the dough and shape them into biscuits. Arrange them onto the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown.
For the Sausage Gravy:
- Cook the ground sausage in a large skillet over medium heat until browned. Break it apart into crumbles as it cooks.
- Once the sausage is cooked, add butter to the skillet and let it melt.
- Sprinkle almond flour over the sausage and stir well to combine.
- Slowly pour in the almond milk, stirring continuously to avoid lumps. Bring the mixture to a simmer.
- Continue to cook and stir until the gravy thickens. Use salt and pepper to season to taste.
