Ingredients:

  • 1/2 cup cold, diced unsalted butter
  • 3 large eggs
  • 1/4 cup unsweetened almond milk

For the Sausage Gravy:

  • 1 lb ground breakfast sausage
  • 2 tablespoons unsalted butter
  • 2 tablespoons almond flour
  • 2 cups unsweetened almond milk
  • Salt and pepper to taste

Instructions:

For the Biscuits:

  1. Adjust the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius) and place parchment paper on a baking pan.
  2. In a large bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.
  3. To the flour mixture, add cold, diced butter. Incorporate the butter with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat the eggs and then add them to the flour mixture. Stir until just combined.
  5. Add almond milk and mix until the dough comes together.
  6. Scoop out about 1/4 cup portions of the dough and shape them into biscuits. Arrange them onto the prepared baking sheet.

For the Sausage Gravy:

  1. Cook the ground sausage in a large skillet over medium heat until browned. Break it apart into crumbles as it cooks.
  2. Once the sausage is cooked, add butter to the skillet and let it melt.
  3. Sprinkle almond flour over the sausage and stir well to combine.
  4. Slowly pour in the almond milk, stirring continuously to avoid lumps. Bring the mixture to a simmer.
  5. Continue to cook and stir until the gravy thickens. Use salt and pepper to season to taste.
