Ingredients:

2 cups almond flour

1/4 cup coconut flour

If erythritol is your preferred keto-friendly sweetener, use 1/2 cup of it.

1 tsp baking powder

1/4 tsp salt

1/3 cup unsalted butter, melted

4 large eggs

1/4 cup unsweetened almond milk

1 tsp vanilla extract

Zest of 1 lemon

1 cup fresh blueberries

Instructions:

Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or coconut oil and set aside.

Almond flour, coconut flour, erythritol, baking powder, and salt should all be thoroughly blended in a large mixing basin.

In a separate bowl, beat the eggs, melted butter, almond milk, vanilla extract, and lemon zest until smooth.

Slowly add the wet ingredients to the dry ingredients, mixing until a thick batter forms.

Don’t bruise the fresh blueberries as you gently fold them in.

When a toothpick is placed into the centre of the bread, it should come out clean after around 40 to 45 minutes of baking in the preheated oven.

The bread should be taken out of the oven and left to cool for ten minutes in the pan.

Transfer the bread to a wire rack carefully so that it can cool entirely.

Once the bread has cooled, slice it into 12 servings.

Tips:

You can use frozen blueberries instead of fresh ones, just make sure to thaw and pat them dry before adding to the batter.

If you prefer a sweeter bread, you can increase the amount of sweetener to your taste.

For up to five days, keep any leftovers in the refrigerator in an airtight container. For longer storage, you can also freeze individual slices.
