Ingredients:
For the cinnamon rolls:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or other preferred sweetener
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract

Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, ground cinnamon, and salt.
- Add the eggs, melted butter, and vanilla extract to the dry ingredients. To make a dough, mix all of the ingredients.
- Place the dough between two sheets of parchment paper and roll it out into a rectangle, about 1/4 inch thick.
