Ingredients:
- 1 big cauliflower head, sliced into florets
- 6 bacon slices, crisply cooked and crumbled
- 1 ½ cups shredded cheddar cheese
- ½ cup sour cream
- ½ cup mayonnaise
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh chives
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
- Steam or boil the cauliflower florets until they are tender but not mushy, about 5-7 minutes. Drain well and set aside.
- In a mixing bowl, combine the sour cream, mayonnaise, melted butter, minced garlic, half of the crumbled bacon, and half of the chopped chives. Mix well to combine.
- Add half of the shredded cheddar cheese into the sour cream mixture. Mix until well incorporated.
- Gently fold the cooked cauliflower into the sour cream and cheese mixture until the cauliflower is evenly coated.
- To taste, add salt and pepper to the mixture. Remember that the bacon and cheese will also contribute to the overall saltiness.
- Transfer the cauliflower mixture to the prepared casserole dish. Spread it out evenly.
- Top the casserole with the remaining shredded cheddar cheese and crumbled bacon.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
- Once done, remove the casserole from the oven and sprinkle the remaining chopped chives over the top.
- Allow the casserole to cool for a few minutes before serving.
