Ingredients:
- 1 medium head cauliflower
- 2 cups shredded mozzarella cheese
- 3 large eggs
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons grated Parmesan cheese
Instructions:
- Preparation:
- Turn the oven’s temperature up to 375 degrees (190 degrees Celsius).
- It is advisable to line a baking sheet with parchment paper.
- Prepare the Cauliflower:
- Remove the leaves and stem from the cauliflower and wash it.
- Cut the cauliflower into florets.
- Place the florets in a food processor and pulse until they resemble rice-like grains.
- Cook the Cauliflower:
- Place the processed cauliflower in a microwave-safe bowl.
- Microwave on high for about 5-6 minutes, or until the cauliflower is soft.
- Allow the cauliflower to cool for a few minutes before transferring it to a clean kitchen towel.
- Wrap the cauliflower in a towel and wring out any excess moisture. This step is crucial to prevent a soggy bread.
- Mix the Dough:
- In a mixing bowl, combine the squeezed cauliflower, shredded mozzarella cheese, dried oregano, garlic powder, salt, and black pepper.
- To make a homogeneous dough, thoroughly combine all of the ingredients.
- Add Eggs:
- Add the eggs to the cauliflower mixture.
- Mix until the eggs are fully incorporated and the mixture forms a dough-like consistency.
- Shape the Bread:
- Place the dough on the baking sheet that has been prepared.
- Shape it into a rectangular loaf, approximately ½ inch (1.3 cm) thick.
- Bake:
- Bake the cauliflower bread in the preheated oven for about 25-30 minutes, or until it’s golden brown on top and set in the center.
- Add Parmesan Cheese:
- Sprinkle the grated Parmesan cheese over the top of the bread during the last 10 minutes of baking.
- Cool and Slice:
- Once the bread is baked, remove it from the oven and let it cool on the baking sheet for a few minutes.
- Place the bread on a cooling rack to cool entirely.
- Once cooled, slice the bread into 12 equal slices.

Cook’s Tips:
- You can customize the seasoning by adding herbs like thyme, rosemary, or basil.
- For added flavor, you can brush the top of the bread with melted butter and sprinkle with extra Parmesan before baking.
- Keep leftovers in the fridge for up to 5 days in an airtight jar. Reheat slices in the toaster or oven to regain their crispiness.
- This bread can be used for sandwiches, as a side with soups, or enjoyed on its own as a low-carb snack.
