Ingredients:

For the Filling:

  • 1 pound ground beef (85% lean)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese

For the Burrito Assembly:

  • 4 large keto-friendly tortillas
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes

Instructions:

1. Prepare the Filling:

  • Over medium heat, warm the olive oil in a big skillet. Add the chopped onion and garlic and sauté for about 2 minutes until they become fragrant and translucent.
  • Add the ground beef to the skillet and cook, breaking it apart with a spatula, until it’s browned and cooked through (about 5-7 minutes).
  • Stir in the diced red bell pepper, chili powder, ground cumin, paprika, salt, black pepper, and crushed red pepper flakes (if using). Cook for an additional 2-3 minutes until the pepper softens and the spices are well incorporated.
  • Remove from the heat and whisk in the fresh cilantro. Place aside.

2. Assemble the Burritos:

  • Warm the keto-friendly tortillas according to the package instructions.
  • Lay out each tortilla and spread 1/4 cup of sour cream over the surface.
  • Spoon the beef and pepper mixture evenly onto each tortilla, leaving a border around the edges.
  • Sprinkle 1/4 cup of shredded cheddar cheese over the beef mixture on each tortilla.
  • Add a portion of shredded lettuce and diced tomatoes on top of the cheese.

3. Roll the Burritos:

  • Fold in the sides of the tortilla, then roll it up tightly from the bottom, tucking in the ingredients as you go.
  • Place the seam side down on a plate or serving platter.

4. Serve:

  • Slice each burrito in half diagonally for a beautiful presentation.
  • You can serve these keto beef burritos immediately, or if you prefer, you can place them on a baking sheet and broil for a few minutes to melt the cheese and slightly crisp up the tortillas.

5. Enjoy:

  • Serve your keto beef burritos with additional sour cream, guacamole, or your favorite keto-friendly dipping sauce.

These keto beef burritos are not only delicious but also low in carbs, making them a perfect choice for a keto-friendly meal. Feel free to customize them with your favorite keto toppings like jalapeños, olives, or hot sauce for an extra kick of flavor. Enjoy your homemade keto beef burritos!
