Ingredients:
For the Filling:
- 1 pound ground beef (85% lean)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
For the Burrito Assembly:
- 4 large keto-friendly tortillas
- 1 cup sour cream
- 1 cup guacamole
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
Instructions:
1. Prepare the Filling:
- Over medium heat, warm the olive oil in a big skillet. Add the chopped onion and garlic and sauté for about 2 minutes until they become fragrant and translucent.
- Add the ground beef to the skillet and cook, breaking it apart with a spatula, until it’s browned and cooked through (about 5-7 minutes).
- Stir in the diced red bell pepper, chili powder, ground cumin, paprika, salt, black pepper, and crushed red pepper flakes (if using). Cook for an additional 2-3 minutes until the pepper softens and the spices are well incorporated.
- Remove from the heat and whisk in the fresh cilantro. Place aside.
2. Assemble the Burritos:
- Warm the keto-friendly tortillas according to the package instructions.
- Lay out each tortilla and spread 1/4 cup of sour cream over the surface.
- Spoon the beef and pepper mixture evenly onto each tortilla, leaving a border around the edges.
- Sprinkle 1/4 cup of shredded cheddar cheese over the beef mixture on each tortilla.
- Add a portion of shredded lettuce and diced tomatoes on top of the cheese.
3. Roll the Burritos:
- Fold in the sides of the tortilla, then roll it up tightly from the bottom, tucking in the ingredients as you go.
- Place the seam side down on a plate or serving platter.
4. Serve:
- Slice each burrito in half diagonally for a beautiful presentation.
- You can serve these keto beef burritos immediately, or if you prefer, you can place them on a baking sheet and broil for a few minutes to melt the cheese and slightly crisp up the tortillas.
5. Enjoy:
- Serve your keto beef burritos with additional sour cream, guacamole, or your favorite keto-friendly dipping sauce.
