For the Topping (optional):
- 1 cup whipped cream (unsweetened)
Instructions:
For the Crust:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine almond flour, coconut flour, powdered erythritol, and salt.
- Add the melted butter and mix until a dough forms.
- Press the dough into the bottom of a 9-inch pie pan to create an even crust.
- Bake for 10-12 minutes or until it’s lightly golden. After taking the food out of the oven, let it cool.
For the Filling:
- In a large mixing bowl, combine the pumpkin puree, eggs, heavy cream, powdered erythritol, vanilla extract, pumpkin spice, and salt.
- Mix until all of the ingredients are thoroughly incorporated.
- Fill the chilled crust with the filling.
Baking:
- Bake the pie in the preheated oven for about 35-40 minutes or until the filling is set, and a toothpick inserted into the center comes out clean.
- Remove the pie from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 2 hours, or until ready to serve.
Serving:
- Slice the keto pumpkin pie into 8 equal portions.
- Optionally, top each slice with a dollop of unsweetened whipped cream.
