Ingredients:

  • 1/4 teaspoon salt

For the Topping (optional):

  • 1 cup whipped cream (unsweetened)

Instructions:

For the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, coconut flour, powdered erythritol, and salt.
  3. Add the melted butter and mix until a dough forms.
  4. Press the dough into the bottom of a 9-inch pie pan to create an even crust.
  5. Bake for 10-12 minutes or until it’s lightly golden. After taking the food out of the oven, let it cool.

For the Filling:

  1. In a large mixing bowl, combine the pumpkin puree, eggs, heavy cream, powdered erythritol, vanilla extract, pumpkin spice, and salt.
  2. Mix until all of the ingredients are thoroughly incorporated.
  3. Fill the chilled crust with the filling.

Baking:

  1. Bake the pie in the preheated oven for about 35-40 minutes or until the filling is set, and a toothpick inserted into the center comes out clean.
  2. Remove the pie from the oven and let it cool to room temperature.
  3. Once cooled, refrigerate for at least 2 hours, or until ready to serve.

Serving:

  1. Slice the keto pumpkin pie into 8 equal portions.
  2. Optionally, top each slice with a dollop of unsweetened whipped cream.
