Prep Time: 20 minutes
Cook Time: 30 minutes
Servings: 12
Ingredients:
For the Cake:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup granulated erythritol (or other keto-friendly sweetener of choice)
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped pecans
For the Frosting:
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered erythritol
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped pecans (for garnish)
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9-inch (23-cm) round cake pan with parchment paper and grease it.
- In a mixing bowl, combine the almond flour, coconut flour, granulated erythritol, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, eggs, almond milk, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients and mix until you have a smooth cake batter. Fold in the chopped pecans.
- Pour the batter into the prepared cake pan and spread it out evenly.
- Bake in the preheated oven for about 30 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and leave it to cool for about 10 minutes in the pan. After that, place it on a wire rack to cool entirely.
- Prepare the frosting while the cake cools. In a mixing bowl, cream together the softened butter and the sugar until it’s creamy and smooth. Gradually add the powdered erythritol and vanilla extract, continuing to beat until well combined.
- Once the cake is completely cool, spread the frosting evenly over the top of the cake.
- Garnish with chopped pecans.
