Ingredients:
- One pound of skinless, boneless, cooked and shredded chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 low-carb tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup chopped (any colour) bell peppers
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh cilantro (optional)
- Serve with guacamole and sour cream (optional).
Instructions:
- Prepare the Chicken:
- Season the chicken breasts with cumin, chili powder, garlic powder, salt, and pepper.
- With a pan over medium heat, preheat the olive oil.
- Cook the chicken breasts for 6-8 minutes per side, or until thoroughly done.
- Shred the cooked chicken using two forks.
- Assemble the Quesadilla:
- Spread the low-carb tortillas out on a clean surface.
- Divide the shredded chicken among the tortillas in an equal layer.
- Sprinkle the chicken with crumbled cheddar cheese.
- Add diced bell peppers, red onion, and cilantro.
- Cook the Quesadilla:
- To make a half-moon shape, fold each tortilla in half.
- In a clean skillet over medium heat, cook each quesadilla for 2-3 minutes on each side or until the cheese is melted and the tortillas are golden brown.
- Serve:
- Remove the quesadillas from the griddle and set aside for a minute to rest.
- Slice each quesadilla into wedges.
- Top with sour cream and guacamole, if you’d like.
