Ingredients:

  • One pound of skinless, boneless, cooked and shredded chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 low-carb tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped (any colour) bell peppers
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh cilantro (optional)
  • Serve with guacamole and sour cream (optional).

Instructions:

  1. Prepare the Chicken:
  • Season the chicken breasts with cumin, chili powder, garlic powder, salt, and pepper.
  • With a pan over medium heat, preheat the olive oil.
  • Cook the chicken breasts for 6-8 minutes per side, or until thoroughly done.
  • Shred the cooked chicken using two forks.
  1. Assemble the Quesadilla:
  • Spread the low-carb tortillas out on a clean surface.
  • Divide the shredded chicken among the tortillas in an equal layer.
  • Sprinkle the chicken with crumbled cheddar cheese.
  • Add diced bell peppers, red onion, and cilantro.
  1. Cook the Quesadilla:
  • To make a half-moon shape, fold each tortilla in half.
  • In a clean skillet over medium heat, cook each quesadilla for 2-3 minutes on each side or until the cheese is melted and the tortillas are golden brown.
  1. Serve:
  • Remove the quesadillas from the griddle and set aside for a minute to rest.
  • Slice each quesadilla into wedges.
  • Top with sour cream and guacamole, if you’d like.
