Ingredients:

  • 1 pound ground beef
  • 1 packet taco seasoning (low-carb or homemade)
  • 1 cup salsa (sugar-free)
  • 1 cup ricotta cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups shredded Mexican cheese blend
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • Sour cream for serving (optional)

  1. Preheat the Oven:

  • If preferred, garnish with a dollop of sour cream before serving.
  • Remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.

  • Allow 10 minutes for the lasagna to rest before slicing.
  • Top with shredded lettuce, diced tomatoes, black olives, and fresh cilantro.
  • If preferred, garnish with a dollop of sour cream before serving.
