Zucchini Tortillas Recipe
Prep Time: 15 minutes
Cook Time: 20 minutes
Servings: 4
Ingredients:
- 4 medium-sized zucchinis
- 2 eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions:
- Preheat the Oven:
Adjust the oven temperature to 375 degrees Fahrenheit, or 190 degrees Celsius, and place parchment paper on a baking sheet. - Prepare the Zucchinis:
Wash the zucchinis and cut the ends. Using a box grater or a food processor, grate the zucchinis. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture. - Combine Ingredients:
In a large mixing bowl, combine the grated zucchini, eggs, grated Parmesan cheese, almond flour, garlic powder, onion powder, salt, and pepper. Mix until all of the ingredients are equally incorporated. - Form Tortillas:
Form a ball out of a bit of the mixture. Place it on the prepared baking sheet and flatten it into a thin, round tortilla shape. Repeat with the remaining mixture, leaving space between each tortilla. - Bake:
Bake the zucchini tortillas in the preheated oven for 15-20 minutes or until the edges are golden brown and the tortillas are firm. For even cooking, you may need to flip them midway during the baking time. - Cool and Serve:
Allow the zucchini tortillas to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, they are ready to be used in your favorite dishes.
