Ingredients:
- 1 medium spaghetti squash (about 3 pounds)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Spaghetti Squash:
- Turn the oven’s temperature up to 400 degrees (200 degrees Celsius).
- Half the spaghetti squash lengthwise. Scoop off the seeds and stringy pulp from the centre using a spoon.
- Brush the inside of each half with olive oil, then season with salt and pepper.
- Place the squash halves on a baking sheet lined with parchment paper or aluminium foil, cut side down.
- Bake in the preheated oven for about 35-40 minutes or until the flesh is tender and then depending on the size of the squash, the cooking time will change. You can test the doneness by inserting a fork into the flesh; it should easily come out.
- Prepare the Cheesy Garlic Sauce:
- The olive oil should be warmed in a saucepan over medium heat.
- Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Reduce the heat to low, then add the heavy cream, butter, dried oregano, and dried basil. Stir well to combine.
- As you gradually whisk in the Parmesan cheese, the sauce will become creamy and silky.
- Season to taste with salt and pepper and you can change the seasonings to your preference.
- Assemble the Dish:
- After the spaghetti squash has finished cooking, create spaghetti-like strands by scraping the flesh with a fork. Put the strands in a large mixing basin.
- Pour the cheesy garlic sauce over the spaghetti squash strands and toss until the sauce evenly coats the squash.
- Preheat your broiler to high.
- Bake and Garnish:
- Transfer the coated spaghetti squash back to the baking sheet or an oven-safe casserole dish.
- Sprinkle the shredded mozzarella cheese over the top of the spaghetti squash.
- Place the baking sheet or dish under the broiler for 2-3 minutes or until the cheese is melted and bubbly, with a golden brown crust.
- Remove from the oven, garnish with chopped fresh parsley, and serve immediately.
