Ingredients:

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 2-3 jalapeno peppers, finely chopped (seeds removed for milder heat)
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or cooking spray.
  2. Almond flour, baking soda, and salt should all be combined in a large mixing dish.
  3. Cheddar cheese has been grated and added to the dry ingredients.
  4. The eggs should be well beaten in a separate basin. Then add the melted butter and sour cream to the eggs and mix until smooth.
  5. When a thick batter develops, add the wet ingredients to the dry ones and whisk until combined.
  6. Fold in the chopped jalapeno peppers and cilantro (if using) into the batter.
  7. Spread the batter evenly in the loaf pan that has been prepared.
  8. A toothpick put into the centre of the bread should come out clean after 40 to 45 minutes of baking it in the preheated oven.
  9. Allow the bread to cool in the pan for 10 minutes after taking it out of the oven.
  10. After cooling slightly, carefully remove the bread from the pan and let it cool completely on a wire rack.

Tips:

  • If you prefer a spicier bread, you can leave some of the jalapeno seeds in the mixture.
  • This jalapeno cheese bread can be enjoyed warm or at room temperature. You can also toast it lightly for added crispiness.
  • In an airtight container, any leftovers can be stored in the refrigerator for up to three days.
