Keto Flan Recipe

Ingredients:
For the Caramel:
- 1/2 cup erythritol or other keto-friendly sweetener
- 2 tablespoons water
For the Custard:
- 4 large eggs
- 1 1/2 cups heavy cream
- 1/2 cup unsweetened almond milk
- 1/2 cup erythritol or other keto-friendly sweetener
- 1 teaspoon vanilla extract
Instructions:
For the Caramel:
- In a saucepan, combine the erythritol and water over medium-high heat.
- Allow the mixture to simmer without stirring until it turns a deep amber color, about 10-12 minutes.
- Carefully pour the caramel into the bottom of 6 ramekins or a flan mold. Swirl the mould to uniformly coat the bottom. Set aside to cool and harden.
For the Custard:
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, whisk together the eggs, erythritol, and vanilla extract until well combined.
- In a separate saucepan, heat the heavy cream and almond milk over medium heat until it just begins to simmer.
- Gradually add the hot cream mixture to the egg mixture, whisking constantly to avoid curdling.
- Strain the custard mixture through a fine-mesh sieve to remove any lumps.
- Pour the custard mixture into the caramel-coated ramekins or flan mold.
Baking:
- Place the ramekins or flan mold in a large baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins or mold. This creates a water bath.
- Carefully transfer the baking dish to the preheated oven and bake for about 45-50 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove the baking dish from the oven and let the flan cool to room temperature in the water bath.
- Once cooled, cover the ramekins or mold with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flan to fully set.
Serving:
- To serve, run a knife around the edge of each ramekin or mold to loosen the flan.
- Place a dessert plate over the top of each ramekin or mold and quickly flip it over to release the flan.
- The caramel sauce will flow over the top of the flan, creating a delicious topping.
