Easy Keto Flan

Keto Flan Recipe

Ingredients:

For the Caramel:

  • 1/2 cup erythritol or other keto-friendly sweetener
  • 2 tablespoons water

For the Custard:

  • 4 large eggs
  • 1 1/2 cups heavy cream
  • 1/2 cup unsweetened almond milk
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1 teaspoon vanilla extract

Instructions:

For the Caramel:

  1. In a saucepan, combine the erythritol and water over medium-high heat.
  2. Allow the mixture to simmer without stirring until it turns a deep amber color, about 10-12 minutes.
  3. Carefully pour the caramel into the bottom of 6 ramekins or a flan mold. Swirl the mould to uniformly coat the bottom. Set aside to cool and harden.

For the Custard:

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, whisk together the eggs, erythritol, and vanilla extract until well combined.
  3. In a separate saucepan, heat the heavy cream and almond milk over medium heat until it just begins to simmer.
  4. Gradually add the hot cream mixture to the egg mixture, whisking constantly to avoid curdling.
  5. Strain the custard mixture through a fine-mesh sieve to remove any lumps.
  6. Pour the custard mixture into the caramel-coated ramekins or flan mold.

Baking:

  1. Place the ramekins or flan mold in a large baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins or mold. This creates a water bath.
  2. Carefully transfer the baking dish to the preheated oven and bake for about 45-50 minutes, or until the flan is set but still slightly jiggly in the center.
  3. Remove the baking dish from the oven and let the flan cool to room temperature in the water bath.
  4. Once cooled, cover the ramekins or mold with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flan to fully set.

Serving:

  1. To serve, run a knife around the edge of each ramekin or mold to loosen the flan.
  2. Place a dessert plate over the top of each ramekin or mold and quickly flip it over to release the flan.
  3. The caramel sauce will flow over the top of the flan, creating a delicious topping.
