Keto Ground Beef Empanadas

Ingredients:

For the Dough:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • One and a Half cup of chilled, unsalted butter, cut into small pieces
  • 1 large egg
  • 2 tablespoons cold water

For the Filling:

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup diced bell pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions:

For the Dough:

  1. In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, and salt.
  2. Add the cold, diced butter to the flour mixture. Incorporate the butter with a pastry cutter or your hands until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the egg and cold water. Add this to the mixture of butter and flour.
  4. Mix until a dough forms. Water should be added one tablespoon at a time to the dough if it’s too dry.
  5. Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for at least 30 minutes.

For the Filling:

  1. In a pan over medium heat, cook the ground beef until browned. Drain any excess fat.
  2. Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are softened.
  3. Season with ground cumin, paprika, salt, and pepper. Stir in chopped cilantro and cook for an additional 2 minutes. Take off the heat source and leave it to cool.

Assembling the Empanadas:

  1. Preheat your oven to 375°F (190°C).
  2. Take one portion of the chilled dough and roll it out between two sheets of parchment paper until it’s about 1/8 inch thick.
  3. Using a round cutter or a glass, cut out circles from the dough.
  4. Place a spoonful of the ground beef mixture onto one half of each circle, leaving a small border around the edge.
  5. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges to seal and use a fork to crimp the edges.
  6. Repeat the process with the second portion of the dough and the remaining filling.
  7. Place the empanadas on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes or until the empanadas are golden brown.
