Keto Ground Beef Empanadas
Ingredients:
For the Dough:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon salt
- One and a Half cup of chilled, unsalted butter, cut into small pieces
- 1 large egg
- 2 tablespoons cold water
For the Filling:
- 1 pound ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup diced bell pepper
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions:
For the Dough:
- In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, and salt.
- Add the cold, diced butter to the flour mixture. Incorporate the butter with a pastry cutter or your hands until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg and cold water. Add this to the mixture of butter and flour.
- Mix until a dough forms. Water should be added one tablespoon at a time to the dough if it’s too dry.
- Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for at least 30 minutes.
For the Filling:
- In a pan over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are softened.
- Season with ground cumin, paprika, salt, and pepper. Stir in chopped cilantro and cook for an additional 2 minutes. Take off the heat source and leave it to cool.
Assembling the Empanadas:
- Preheat your oven to 375°F (190°C).
- Take one portion of the chilled dough and roll it out between two sheets of parchment paper until it’s about 1/8 inch thick.
- Using a round cutter or a glass, cut out circles from the dough.
- Place a spoonful of the ground beef mixture onto one half of each circle, leaving a small border around the edge.
- Fold the other half of the dough over the filling to create a half-moon shape. Press the edges to seal and use a fork to crimp the edges.
- Repeat the process with the second portion of the dough and the remaining filling.
- Place the empanadas on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until the empanadas are golden brown.
