Keto Blondies

Keto Blondies

Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup erythritol (or any keto-friendly sweetener of your choice)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions:

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a square baking pan (8×8 inches) or line it with parchment paper.
  2. Mix Dry Ingredients:
In a mixing dish, combine almond flour, baking powder, and salt.
  3. Prepare Wet Ingredients:
In another bowl, beat the eggs, then add the melted butter, erythritol, and vanilla extract. Mix until well combined.
  4. Combine Wet and Dry Ingredients:
Gradually combine the dry and wet ingredients, mixing until a smooth batter develops.
  5. Add Nuts (Optional):
If you like, fold in chopped nuts of your choice into the batter.
  6. Transfer to Baking Pan:
Fill the baking dish with the batter, spreading it evenly.
  7. Bake:
Bake for 20-25 minutes, or until the sides are golden brown and a toothpick inserted into the centre comes out clean, in a preheated oven.
  8. Cool and Cut:
Allow the blondies to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
