Ingredients:

For the Cake:

  • 6 large eggs, separated
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1/2 cup erythritol (or other keto-friendly sweetener)
  • 1/2 teaspoon baking powder
  • A pinch of salt

For the Frosting:

  • 1 cup heavy cream
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract

Instructions:

For the Cake:

  1. Preheat your oven to 325°F (163°C). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
  2. In a large bowl, whisk together the egg yolks, melted butter, almond milk, and vanilla extract until well combined.
  3. In a separate bowl, mix the almond flour, coconut flour, baking powder, and erythritol.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
  5. In another clean, dry bowl, beat the egg whites with cream of tartar until stiff peaks form.
  6. Gently fold the egg whites into the batter until just combined. Take care not to deflate the egg whites.
  7. Pour the batter into the prepared cake pan and smooth up the top with a spatula.
  8. Bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool completely in its pan before removing it.

For the Frosting:

  1. In a chilled bowl, whip the heavy cream, powdered erythritol, and vanilla extract until stiff peaks form.
  2. Once the cake has cooled, spread the frosting evenly over the top.
  3. Optionally, you can decorate the cake with additional toppings such as sliced almonds or unsweetened shredded coconut.
