Ingredients:

For the Dough:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened whey protein powder
  • 1/4 cup granulated erythritol or your preferred low-carb sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Filling:

  • 1/2 cup sugar-free fruit preserves (such as raspberry or strawberry)

For the Glaze:

  • 1/2 cup powdered erythritol
  • 1-2 tablespoons almond milk
  • 1/2 teaspoon vanilla extract

Instructions:

Dough Preparation:

  1. In a large mixing bowl, combine almond flour, coconut flour, whey protein powder, erythritol, baking powder, and salt.
  2. Add softened butter, egg, and vanilla extract to the dry ingredients. Mix well until a dough forms.
  3. Divide the dough into two equal parts and shape each into a rectangle. Chill them for at least half an hour after wrapping them in plastic wrap.

Assembly:

  1. Preheat your oven to 350°F (175°C).
  2. Roll out one portion of the chilled dough between two sheets of parchment paper to your desired thickness, aiming for a rectangle shape.
  3. Trim the edges to create straight lines, then cut the dough into smaller rectangles (pop tart shapes).
  4. Spoon a small amount of sugar-free fruit preserves onto half of the rectangles, leaving a small border around the edges.
  5. Place another rectangle of dough on top of each filled one. Press the edges together to seal, and use a fork to crimp the edges.
  6. Repeat the process with the second portion of dough.
  7. Place the assembled pop tarts on a baking sheet lined with parchment paper.

Baking:

  1. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  2. Allow the pop tarts to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Glaze:

  1. In a small bowl, whisk together powdered erythritol, almond milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled pop tarts.
