Keto Pop Tarts
Ingredients:
For the Dough:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened whey protein powder
- 1/4 cup granulated erythritol or your preferred low-carb sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
For the Filling:
- 1/2 cup sugar-free fruit preserves (such as raspberry or strawberry)
For the Glaze:
- 1/2 cup powdered erythritol
- 1-2 tablespoons almond milk
- 1/2 teaspoon vanilla extract
Instructions:
Dough Preparation:
- In a large mixing bowl, combine almond flour, coconut flour, whey protein powder, erythritol, baking powder, and salt.
- Add softened butter, egg, and vanilla extract to the dry ingredients. Mix well until a dough forms.
- Divide the dough into two equal parts and shape each into a rectangle. Chill them for at least half an hour after wrapping them in plastic wrap.
Assembly:
- Preheat your oven to 350°F (175°C).
- Roll out one portion of the chilled dough between two sheets of parchment paper to your desired thickness, aiming for a rectangle shape.
- Trim the edges to create straight lines, then cut the dough into smaller rectangles (pop tart shapes).
- Spoon a small amount of sugar-free fruit preserves onto half of the rectangles, leaving a small border around the edges.
- Place another rectangle of dough on top of each filled one. Press the edges together to seal, and use a fork to crimp the edges.
- Repeat the process with the second portion of dough.
- Place the assembled pop tarts on a baking sheet lined with parchment paper.
Baking:
- Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
- Allow the pop tarts to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Glaze:
- In a small bowl, whisk together powdered erythritol, almond milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled pop tarts.
