Keto Creamy Garlic Chicken Recipe

Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Cauliflower rice or zoodles (optional, for serving)
Instructions:
- Season the chicken breasts liberally with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken breasts for 6-8 minutes on each side, or until golden brown. Take the chicken out of the skillet and set aside.
- In the same skillet, sauté the minced garlic for approximately a minute, until fragrant.
- Pour in the chicken broth to deglaze the skillet, scraping up any browned pieces from the bottom.
- Mix in the heavy cream, Parmesan cheese, and Italian spice. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Return the chicken breasts to the skillet and ladle some of the sauce on top. Simmer for an additional 5-7 minutes, or until the chicken is cooked through and the sauce has thickened further.
- Before serving, garnish with finely chopped fresh parsley.
- Serve the creamy garlic chicken hot over cauliflower rice or zoodles, if desired.
