Ingredients:

For the Crust:

  • 2 cups shredded mozzarella cheese
  • 1 cup almond flour
  • 2 tablespoons cream cheese
  • 1 large egg

For the Toppings:

  • 1/2 pound ground beef or turkey
  • 1 packet keto-friendly taco seasoning
  • 1/4 cup water
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • Sliced jalapenos (optional)
  • Sour cream (for topping)
  • Chopped fresh cilantro (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for 30 seconds at a time, stirring after each, until the cheeses are melted and well blended.
  3. Add the almond flour and egg to the melted cheese mixture. Mix until the dough comes together.
  4. Place the dough on a baking sheet lined with parchment paper. Press and shape the dough into a circular pizza crust using your hands. The crust can be as thin or as thick as you choose.
  5. Bake the crust in the preheated oven for about 10-12 minutes or until it’s golden and firm.
  6. While the crust is baking, cook the ground beef or turkey in a skillet over medium heat until fully cooked. Drain any excess grease.
  7. Add the taco seasoning and water to the cooked meat. Mix well and let it simmer for a few minutes until the mixture thickens.
  8. Once the crust is baked, remove it from the oven. Spread the taco meat mixture evenly over the crust.
  9. Sprinkle the shredded cheddar cheese over the taco meat.
  10. Scatter the diced tomatoes, onions, and bell peppers over the cheese.
  11. If desired, add sliced jalapenos to the toppings for extra heat.
  12. Place the pizza back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  13. Once the pizza is done, remove it from the oven and let it cool slightly before slicing.
  14. Serve your Keto Taco Pizza with dollops of sour cream and a sprinkle of chopped fresh cilantro.
