Ingredients:

  • 3 ripe avocados, peeled and pitted
  • 1/4 cup red onion, finely diced
  • A medium tomato that has been sliced and seeded
  • 1 small jalapeno, seeds and membranes removed, finely minced
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. To begin, cut the avocados in half and remove the pits. Use a spoon to scoop out the avocado flesh into a mixing bowl.
  2. Using a fork or potato masher, mash the avocado to your desired level of chunkiness. If you prefer smoother guacamole, mash it more thoroughly.
  3. Add the finely diced red onion to the mashed avocado.
  4. Dice the tomato and remove the seeds. Excess moisture from the seeds can make the guacamole watery, so it’s best to discard them. Add the diced tomato to the bowl.
  5. Mince the jalapeno after removing the seeds and membranes for less heat. You can adjust the amount of jalapeno based on your spice preference. Fill the bowl with the jalapeno mince.
  6. Mince the garlic cloves and finely chop the cilantro. In a mixing bowl, combine them with the remaining ingredients.
  7. Squeeze one lime juice over the mixture. Lime not only provides flavour but also prevents browning of the avocados.
  8. Season the guacamole with salt and pepper to taste. Remember that a little salt goes a long way in enhancing the flavors.
  9. Gently fold all the ingredients together until they are well combined. You don’t want to overmix since you want to keep the desired texture.
  10. Taste and adjust the seasoning if needed. You can add more lime juice, salt, or pepper according to your preference.
  11. Transfer the guacamole to a serving bowl and cover it with plastic wrap, pressing the wrap directly onto the surface of the guacamole to minimize browning.
  12. Refrigerate the guacamole for at least 30 minutes to allow the flavors to meld together.This is an optional step, although it is strongly advised for the best flavour.
  13. Before serving, give the guacamole a final stir. Serve with keto-friendly chips, sliced veggies, or as a topping for your favorite keto dishes.
