  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet over medium-high heat, warm the olive oil. Cook the pork slices until they are browned. After taking the steak out of the skillet, place it aside.
  2. In the same skillet, add the butter and chopped onion. Sauté the onion until it becomes translucent, then add the minced garlic and sliced mushrooms. Cook the mushrooms until they are tender and any liquid has evaporated, stirring periodically.
  3. Return the cooked beef to the skillet with the mushrooms and onions.
  4. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Allow the sauce to thicken and the flavours to combine for around 10-15 minutes as the mixture simmers.
  5. Reduce to a low heat and mix in the sour cream. Simmer for an additional 5 minutes, being careful not to let the mixture boil, as this can cause the sour cream to curdle. To season, season to taste with salt and pepper.
  6. Serve the keto beef stroganoff hot, garnished with chopped fresh parsley.
