Ingredients:

  • 1/4 tsp salt
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp instant coffee granules (optional, for enhanced chocolate flavor)

For the Chocolate Ganache:

  • 4 oz dark chocolate (at least 70% cocoa), chopped
  • 1/2 cup heavy cream
  • 2 teaspoons of powdered erythritol or another sweetener suitable for keto

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C). A 9-inch round cake pan should be greased and lined with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, granulated erythritol, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, melted butter, sour cream, vanilla extract, and instant coffee (if using) until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a smooth batter forms.
  5. Smooth the top with a spatula after pouring the batter into the prepared cake pan.
  6. Bake for about 25-30 minutes, or until a toothpick inserted into the centre comes out clean. Be careful not to overbake.
