Ingredients:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (1.25 ounces) taco seasoning mix (make sure it’s low-carb)
- 1/2 cup water
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives (optional)
- 1/4 cup sliced jalapeños (optional)
- 2 tablespoons chopped fresh cilantro (optional)
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Ground Beef: In a large skillet over medium-high heat, cook the ground beef until it’s browned and cooked through, breaking it apart with a spatula as it cooks. Drain any excess fat.
- Add Onion and Garlic: Add the diced onion and minced garlic to the cooked beef. Sauté for 2-3 minutes, or until the onion is transparent and fragrant.
- Season with Taco Mix: Sprinkle the taco seasoning mix over the beef and onion mixture. Stir well to combine. Add the water and simmer for 2-3 minutes until the mixture thickens. Remove from heat.
- Prepare the Casserole Dish: Spray a 9×13-inch baking dish with cooking spray to prevent sticking.
- Layer the Casserole: Spread the beef and onion mixture evenly in the bottom of the baking dish.
- Create Sour Cream Layer: In a small bowl, combine the sour cream and mayonnaise. Spread this mixture evenly over the beef layer.
- Add Cheese: Sprinkle the shredded cheddar cheese evenly over the sour cream layer.
- Bake: Place the casserole in the preheated oven and bake for about 20 minutes or until the cheese is bubbly and lightly browned.
- Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with shredded lettuce, diced tomatoes, sliced black olives, sliced jalapeños, and chopped cilantro if desired.
- Serve: Slice the casserole into portions and serve while it’s still hot.
- Enjoy Your Keto Taco Casserole!
