Ingredients:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1.25 ounces) taco seasoning mix (make sure it’s low-carb)
  • 1/2 cup water
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced jalapeños (optional)
  • 2 tablespoons chopped fresh cilantro (optional)
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Ground Beef: In a large skillet over medium-high heat, cook the ground beef until it’s browned and cooked through, breaking it apart with a spatula as it cooks. Drain any excess fat.
  3. Add Onion and Garlic: Add the diced onion and minced garlic to the cooked beef. Sauté for 2-3 minutes, or until the onion is transparent and fragrant.
  4. Season with Taco Mix: Sprinkle the taco seasoning mix over the beef and onion mixture. Stir well to combine. Add the water and simmer for 2-3 minutes until the mixture thickens. Remove from heat.
  5. Prepare the Casserole Dish: Spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  6. Layer the Casserole: Spread the beef and onion mixture evenly in the bottom of the baking dish.
  7. Create Sour Cream Layer: In a small bowl, combine the sour cream and mayonnaise. Spread this mixture evenly over the beef layer.
  8. Add Cheese: Sprinkle the shredded cheddar cheese evenly over the sour cream layer.
  9. Bake: Place the casserole in the preheated oven and bake for about 20 minutes or until the cheese is bubbly and lightly browned.
  10. Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with shredded lettuce, diced tomatoes, sliced black olives, sliced jalapeños, and chopped cilantro if desired.
  11. Serve: Slice the casserole into portions and serve while it’s still hot.
  12. Enjoy Your Keto Taco Casserole!
