Directions:

  1. Bring the Ribeye to Room Temperature:
    Take the ribeye steaks out of the refrigerator at least 30 minutes before cooking to bring them to room temperature. This helps the steaks cook more evenly.
  2. Preheat the Oven:
    Preheat your oven to 400°F (200°C). This will be used later to finish cooking the steaks after searing.
  3. Season the Steaks:
    To remove extra moisture from the steaks, pat them dry with paper towels. Season both sides liberally with salt and pepper. Sprinkle dried rosemary evenly over the steaks.
  4. Preheat the Pan:
    Preheat a cast-iron skillet or oven-safe pan to medium-high heat. Heat the olive oil in the pan.
  5. Sear the Steaks:
    Place the ribeye steaks in the hot pan. Sear each side for 2-3 minutes, or until a golden-brown crust develops. Don’t forget to sear the edges for a short time to render some of the fat.
